This is only a small sampling of recipes available for the vegetarian. Many of the soup and stew recipes are either meatless or can be adapted. All can be made low fat. The ideal vegetarian meal should be so delicious that you would never miss the meat. A new term....'flexiterian' has come into being to describe a eating philosophy that encourages meatless meals several times a week as a way of reducing fat intake and boosting our immune systems with healthy vegetables and grains.
SPICY PASTA WITH TOMATOES AND ARUGULA-Pine nuts add nutrition and chili's give this dish a bright peppery flavor. Lentils can be added to bulk this meal up.
VEGETABLE LASAGNA-A protein packed dish of ricotta and fontini cheese with spinach.
ACORN SQUASH LASAGNA-A delicious fall dish with local acorn squash taking center stage!
TORTELLINI WITH MUSHROOM SAUCE-Delicious cheese tortellini with a earthy shitake mushroom sauce
SPINACH PIE-A Greek classis with spinach, feta cheese and delicious phyllo crust.
SPAGHETTI FRITTATA-Spaghetti with eggs, jarisberg cheese and peas sautéed, then baked in a skillet. Additional protein from beans or tofu can be added.
RATATOUILLE-A delicious cool weather classic with seasonal vegetables (eggplant, zucchini, peppers and tomatoes) blended with spices for a one pot meal and served with your choice of rice or pasta.
PORTOBELLO'S WITH LEEKS AND SPINACH-Large caps mounded with spinach & leeks, topped with goat cheese and baked till melting done.
MACARONI AND CHEESE-A kid favorite, only homemade with three cheeses.
EGGPLANT RICOTTA BAKE-This low fat version bakes the eggplant slices instead of frying and uses part skim ricotta topped with a marinara sauce.
PASTA WITH LENTILS & ARUGULA- Delicious, hearty and filling.
EGGPLANT AND ZUCCHINI PARMESAN-The veggies are baked, not fried in oil, and then combined with a marinara sauce, cheese and then baked.
MAMA'S STUFFED SHELLS- Three cheeses combined with a hearty marinara sauce that will have everyone asking for seconds.
THREE BEAN CHILI WITH VEGETABLES- No one will miss the meat when red peppers, zucchini and tomatoes combine with pinto, kidney & black beans for a wholesome powerhouse meal. Add your own shredded cheese and sour cream.
WALNUT, ARUGULA AND LEMON FETTUCCINE- Almost a full cup of walnuts makes for heart healthy eating.
RISOTTO CON FUNGI PORCINI- The ultimate low fat risotto. Earthy porcini and regular mushrooms combine with a rich veggie broth for an addictive dish with no cream or butter.
VEGETABLE FRITTATA- Seasonal veggies combine with eggs for a delicious, healthy and nutritious dish.
WINTER VEGETABLE COUSCOUS- Mushrooms, onions, celery root, rutabaga, leeks, cauliflower and chick peas served on a bed of golden couscous. What's not to like?
SESAME STIR FRIED LENTILS AND VEGETABLES- Full of heart healthy veggies quickly stir fried to perfection.
SZECHUAN SPICED TOFU-Baby corn and boc choy combine beautifully with spiced tofu for a nutritious meal.
