My favorite recipes! The dishes in many Asian, Mexican and Indian cuisines almost always utilize fresh produce and often exotic and aromatic spices. Many of these spices, such as ginger, turmeric and chilies are now recognized as providing many health benefits and antioxidant qualities. You'll also note that the majority of the dishes use chicken or seafood instead of beef.

MEXICAN/SOUTHWESTERN

QUESADILLAS CON FRIJOLES REFRITOS-Fat free refried beans, corn and Monterey jack cheese is baked on whole wheat or flour tortillas till melted. A "car friendly "food for soccer moms and very healthy.

CHICKEN ENCHILADOS WITH RED OR GREEN CHILI SAUCE. Old fashioned enchiladas with your choice of red or green sauce. The green sauce is made from tomatillos and has a bright lime-like taste.

SWISS CHICKEN ENCHILADOS-An interesting variation on the above dish with a white sauce and Swiss cheese instead of cheddar.

STEAK a LA MEXICAN-Skirt steak cut into strips grilled and served with a tomato and cilantro salsa sauce.

PUEBLA STYLE CHICKEN MOLE- A classic Mexican dish with chicken breasts and thighs simmered in a complex mole sauce then finished with a hint of chocolate!

TEX-MEX LASAGNA-This one will be a favorite. Ground turkey mixed with south of the border seasonings, black beans and Mexican cheeses will convert you to this version.

PORK ENCHILADAS-Lean pork with a green salsa and Monterey Jack cheese.

EMPANADAS-Delicious whole wheat/white flour pastry filled with ground pork, beef or chicken. These make great car food for the harried Mom.

INDIAN

CHICKEN BIRIYANI-A baked Indian dish with chunked breasts simmered in a yogurt sauce with aromatic spices, raisins and cashews.

SHRIMP CURRY-Peeled shrimp in a mild curry sauce with peas.

ROGAN JOSH-A lamb curry simmered in a ginger and spice infused broth until tender and aromatic. Loin of pork can be substituted.

MIDDLE EASTERN LAMB BURGERS- Try this one for a change in the old burger routine. Seasoned lamb burgers, topped with a baba ghanoush on rolls or pitas.

SHRIMP VINDALOO--Ginger, cumin, coriander, turmeric, cloves and raisins all simmer in a favor packed broth with the shrimp added at the last minute to insure tenderness.

MOUSSAKA-Well, actually more Turkish than Indian, but a great dish. Your choice of ground lamb or turkey cooked lasagna style with eggplant, potatoes and peppers in a yogurt béchamel sauce.

ASIAN

SPICY ASIAN-STYLE PASTA SALAD-Your choice of chicken or shrimp with red peppers, snow peas, onions and peanuts topped with fresh basil.

KING PAO SHRIMP-Peel and eat shrimp with Chinese vegetables and peanuts served on jasmine rice.

SESAME ORANGE CHICKEN-Lightly battered and fried, then coated with a reduced orange and soy sauce mixture.

BRAISED SEAFOOD WITH CHINESE VEGETABLES & NOODLES-Scallops and shrimp in a light sauce with Chinese vegetables and noodles

PAD THAI-Thailand's most famous dish. Chicken and shrimp stir fried with bean sprouts and peanuts.

MOO SHU PORK (OR CHICKEN)-Family friendly dish served on flour tortillas' or steamed cabbage leaves for a healthy twist.

GRAZED PORK CUTLETS WITH ASIAN SAUCE-A thick orange and ginger sauce gives these a bright fresh taste.
